Terrific Trio Grilled Cheese

About the Recipe

The perfect trio for a grilled cheese is a thick slice of gooey cheese and two crisp bread slices. Eat Local's Terrific Trio cheese combines earthy sharp cheddar, nutty parmesan and sweet gouda or the maximum gooeyness and flavor. Want to add an extra oomph? Blend the cheese in a food processor, then fold in fresh chives and a pinch of black pepper.

Ingredients

  • 5 ounces Terrific Trio cheese, cut into 1/2 inch cubes, at room temperature

  • 1 tablespoon chives, finely chopped

  • 1/4 teaspoon coarse black pepper

  • 4 pieces sourdough bread, sliced 1/3-inch thick

  • 2 tablespoons mayonnaise


Preparation

Step 1


Warm cast-iron skillet over medium heat for 8-10 minutes to bring to temperature.


Step 2

Add the Terrific Trio to a food processor and pulse until a smooth paste forms. Transfer to a mixing bowl and fold in the chives and black pepper.


Step 3


Place bread on a clean work surface. Spread a thin layer of the mayonnaise on one side of each piece of bread. Flip 2 of the slices so that the mayonnaise side faces down. Divide and spread the cheese mixture over the 2 slices using a rubber spatula. Close the sandwiches with remaining 2 slices of bread.


Step 4


Add sandwiches to skillet and cook, flipping occasionally until golden brown and crispy on both sides, about 6-8 minutes.


Step 5


Transfer sandwiches to a cutting board and allow them to rest for a minute before slicing in half. Serve warm.
